INGREDIENTS

CRUMB TOPPING:

  • 3/4 cup all-purpose flour (spooned & leveled)
  • 1/2 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter cold

CREAM CHEESE FILLING:

  • 1 8-ounce package cream cheese, softened to room temperature
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

PUMPKIN CAKE:

  • 1 and 1/2 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree (NOT pumpkin pie filling)
  • 1/2 cup canola or vegetable oil
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

INSTRUCTIONS

  • Preheat the oven to 350 degrees Fahrenheit. The first step is to spray a springform pan that is 9 inches in diameter with nonstick cooking spray, and then set it aside temporarily.
