The word “pomodoro” comes from the Italian word for tomato, therefore it is essentially pasta with tomato sauce. Despite the fact that it is a traditional Italian dish, it is cooked with only a few basic ingredients, which is a very good thing. There are times when simplicity is the best, and this recipe is a perfect example of that.

The Best Pasta Pomodoro

There are a few tips for making the BEST pasta pomodoro. I am all about sharing secrets, so I am going to tell. Don’t worry, if you do have a deep dark secret, I can keep a secret, I just don’ t like to:)

    1. First, be certain that you are using high-quality components. Given that there are not a great deal of components, it is important that you ensure that each and every one of them is of a good grade.
    2. When we make this dish, we use canned tomatoes, but we make sure to use only San Marzano whole peeled tomatoes. You won’t find better canned tomatoes than these. Ensure that you make use of them in order to achieve the most flavorful tomato sauce possible.
    3. Before you begin, use a blender or a food processor to crush the tomatoes into a smooth consistency.
    4. Spaghetti is being used here, although bucatini, angel hair, or fettuccini might also be used instead. We are huge fans of DeLallo’s pasta!
      In order to give the sauce a little bit of a heat, consider adding some crushed red pepper flakes to it. You can leave the children out of it if they are going to consume it, but our sons are fine with a little bit of heat under the circumstances.
    5. Make sure that you set aside half a cup of the water from the pasta so that you can incorporate it back into the sauce. This step must not be skipped.
      Include a small amount of butter in the pasta at the very end. Even though you only need two tablespoons, the difference that those two tablespoons create is significant. Pasta is made more decadent by the addition of butter.

Ingredients

    • ¼ cup olive oil
    • 1 medium yellow onion chopped
    • 5 garlic cloves  minced
    • 1/4 teaspoon crushed red pepper flakes
    • 1 28- ounce can San Marzano whole peeled tomatoes puréed in a food processor or blender
    • 1/2 teaspoon kosher salt
    • 1/4 cup chopped basil
    • 12 ounces spaghetti
    • 2 tablespoons unsalted butter cut into pieces
    • ¼ cup finely grated Parmesan cheese
    • Extra basil and Parmesan for garnish

 

Instructions

    1. In a large skillet, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally, for 10 minutes or until the onion is soft. Add the garlic and red pepper flakes and cook for 3 minutes. Stir in the puréed tomatoes and season with salt.
    2. Cook the sauce until it starts to thicken, stirring occasionally. This will take about 20 minutes. When the sauce has thickened, stir in the fresh basil.

 

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente, according to package instructions. **Reserve ½ cup of the pasta water and then drain the pasta.**
  • Place the pasta back in the large pot, add the tomato sauce and hot pasta water. Stir until the sauce coats the pasta. Add butter and Parmesan cheese and toss until butter and cheese are melted. Plate the pasta and garnish with basil and Parmesan cheese, if desired.
