INGREDIENTS

  • 1/2 cup low sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup fresh lime juice
  • 1/4 cup vegetable oil
  • 2 Tablespoons minced garlic
  • 1 Tablespoon minced fresh ginger
  • 2 Tablespoons chopped scallions
  • 8 large bone-in, skin on chicken thighs
  • 2 teaspoons cornstarch

INSTRUCTIONS 

  • Using a whisk, combine the soy sauce, honey, lime juice, vegetable oil, garlic, ginger, scallions, and ¼ teaspoon of pepper in a big bag that can be sealed.
  • After adding the chicken thighs, make sure the bag is sealed, and then move the chicken around in the bag in a cautious manner until it is completely coated. Put the chicken in the refrigerator for one hour.

 

  • Put the rack in the middle of the oven and preheat it to 350 degrees Fahrenheit. Place an oven-safe baking rack on top of a baking sheet that has been lined with parchment paper at the bottom.
  • The chicken should be removed from the bag, and the marinade should be set aside. First, remove any extra marinade from the chicken, and then place the chicken thighs on the oven rack with the skin-side facing up. 15 minutes should be spent baking the chicken. The glaze should be prepared while the chicken is in the oven.

  • Take the chicken thighs out of the oven and apply a liberal amount of glaze to each of them. Take them back into the oven and continue cooking them for an additional 15 to 20 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the juices run clear rather than pink.
  • After removing the chicken from the oven, further glaze should be applied to it before it is served.
