Easy Maple Roasted Carrots Recipe

Ingredients

    1. 2 lbs carrots peeled and cut into 2 inch chunks
    2. 1 cup walnuts gently chopped
    3. 3 tablespoons salted butter
    4. 1/2 cup maple syrup
    5. 1/4 cup brown sugar packed
    6. 1 teaspoon cinnamon
    7. 1/2 teaspoon ground ginger

 

  • 1/2 teaspoon kosher salt
  • teaspoon fresh thyme to finish

Instructions

  • Bring the oven up to 400 degrees Fahrenheit. After lining a large baking sheet with a rim with aluminum foil, set it aside.
  • In a small saucepan, combine the butter, sugar, maple syrup, ginger, cinnamon, and salt. Heat the mixture over medium heat until the butter melts and the sugar dissolves. When the sugar has completely dissolved and the butter has melted, whisk the mixture.
  • To a large bowl, add the carrots and walnuts to the mixture. Blend them thoroughly after pouring butter and maple sauce over them.
  • Add carrots on the sheet that has been lined with foil. Spread into a layer that is uniform. Bake for twenty minutes after adding to the oven.
  • Taking the casserole out of the oven, place the carrots in a serving dish. While the carrots are still on the foil, use a spatula to apply the remaining glaze to them. After a thorough mixing, garnish with some fresh thyme.

Cut the Carrots

Can I use baby carrots?

Evenly Cut the Carrots

The temp and cooking time is just right for these 2 inch-ish sized pieces of carrot and will make tender but not mushy maple glazed carrots. But if you’re using carrots that have big thick ends, just give them an extra slice in half so they’re closer to the size of the other carrots.

 

Finish with Thyme

Totally optional, but just a few springs of fresh thyme really add the right little savory touch
