I didn’t want to see it go to waste, so I made them.
Buttermilk Blueberry Muffins Recipe
When baked items are made with buttermilk, why do they taste so good? It is said in Fine Cooking that buttermilk is utilized in the baking process because it produces a batter that is slightly acidic and helps to maintain the moistness and tenderness of baked goods by breaking down lengthy and tough strands of gluten.

INGREDIENTS
- 2 1⁄2cups flour

- Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.
- Fold in blueberries.
- Spoon batter into greased muffin cups and bake till golden brown.
- Bake at 400 F for 20 -30 minutes.

Not only do these muffins contain buttermilk, but the height of the muffin top is another reason why they are considered to be the best buttermilk blueberry muffins ever done. My favorite way to make muffins is to fill the wells all the way to the top and even dome them a little bit.
