Soft and Fluffy Cream Cheese Sugar Cookies Recipe

I've never made sugar cookies that were so soft, fluffy, and tasty before. If you want to make something easy and sweet, these are the best cookies for Valentine's Day. Of course, you can eat them any time of the year. Please say yes!  

– 3/4 cup (1 1/2 sticks) unsalted butter – 4 ounces cream cheese – 3/4 cups granulated sugar – 1 teaspoon vanilla extract – 1 egg, at room temperature* – 2 1/4- 2 1/2 cups all purpose flour – 1/2 teaspoon baking soda – 1/4 teaspoon salt FROSTING – 2 cups powdered sugar – 1 tablespoons meringue powder – 3-6 tablespoons water – 1/2 vanilla bean, seeds removed or 1 teaspoon vanilla extract – Beet juice or food coloring

Mix the butter, cream cheese, sugar, and vanilla in a large basin for 3-5 minutes until light and creamy. Mix in the egg until evenly.

Add 2 1/4 cups flour, baking soda, and salt and beat until the dough forms a ball, adding more as required.

Cover your work with flour. Flatten each half of dough into a disc. Roll the dough 1/4 inch thick. Make sure you have enough flour to avoid sticking.

Cut cookies to your specifications. Carefully place cookies on a parchment-lined baking sheet. Cover the baking sheet and freeze for 20–15 minutes until solid.

Roll out leftover scraps and repeat with remaining dough disc. Pre-heat oven to 350. Bake the cookies on the middle rack for 12-15 minutes until softly golden brown.

Avoid overbaking. After five minutes on the baking sheet, transfer to a wire cooling rack to finish cooling.

Step 6

Make icing by mixing sugar, meringue powder, and 3 tablespoons water. Mix until ribbon-like frosting forms. Mix vanilla and 1-3 teaspoons beetroot juice till blended.

After cooling, frost and decorate cookies. Store in an airtight jar for 5 days.
