Deep Dish Chocolate Coffee Blondies. Make these simple two-person blondies without baking! Beautiful deep-dish blondies made with pantry ingredients, one skillet, and little effort. Every bite has chocolate pockets, browned butter, coffee, vanilla, and gooeyness.  

– 6 tablespoons salted butter – 2 tablespoons granulated sugar – 2 tablespoons light or dark brown sugar – 1 teaspoon vanilla extract – 1/4-1/2 teaspoon instant espresso powder – 1 large egg, at room temperature – 1/3 cup, plus 1 tablespoon all-purpose flour – 1/4 teaspoon baking powder – 1/2 cup dark chocolate chunks or use chocolate chip – Flaky sea salt

Heat the oven to 350°F.   Add butter to a small skillet over medium heat.

Brown the butter for 2-3 minutes till it smells toasted. Stir often. Stir in sugar, brown sugar, vanilla, and espresso powder after removing from heat.

Allow this to cool for 10 minutes. Whisk one large egg in a bowl for one minute until foamy. Incorporate browned butter into egg.

Step 3

Add 1/3 cup flour and baking powder. Dust dough with 1 tablespoon flour. Mix in the chocolate chunks.

Step 4

Bake the dough in two 8-12-ounce ramekins for 18-22 minutes until firm around the sides but gooey in the centre.

Season with sea salt after baking. Dig in...preferably with ice cream.
