Pumpkin Butter Rugelach Cookies Recipe

Perhaps most of you are celebrating this weekend. Please include your aims and activities. Why have I never planned a wonderful Halloween? Love Halloween, but never go to parties. Instead, I watch Halloween films. My homebody nature makes me return home.  

– 2 sticks ( 1 cup) unsalted butter, at room temperature – 8 ounces cream cheese, at room temperature – 2 tablespoons granulated sugar – 1 teaspoon vanilla extract – 1/4 teaspoon kosher salt – 2 cups all-purpose flour – PUMPKIN BUTTER – 1 (15 ounce) can pumpkin puree – 1/3 cup light brown sugar – 2 tablespoons real maple syrup – 1 teaspoon vanilla extract – 1 teaspoon pumpkin pie spice – 1/2 teaspoon cinnamon – 1 cup pecans or walnuts, finely chopped – 1 egg, beaten – Coarse sugar, for sprinkling

Combine butter, cream cheese, sugar, and vanilla in a large bowl and beat until frothy, 2-3 minutes. Beat in flour and salt. Dough will be damp.

Shape the dough into a ball on a floured surface. Cut into 4 equal pieces. Wrap in plastic and refrigerate 30 minutes.

Make pumpkin butter. Mix pumpkin, brown sugar, maple, pumpkin pie spice, and cinnamon in a medium saucepan. Boil gently over medium heat.

Stir often until the pumpkin thickens but remains spreadable, 10–20 minutes. Pumpkin butter thickens as it cools. Leftovers can be refrigerated for 2 weeks.

Roll each dough ball into a 9-inch circle on a floured surface. Spread 2 tablespoons pumpkin butter on dough and add 1/4 cup nuts. Press nuts into dough gently.

Step 5

Cut the circular into 12 wedges. Roll cookies into crescents with the broad edge and place on parchment-lined baking sheets. Repeat with remaining dough.

Step 6

 Cookies can be frozen for 15 minutes or refrigerated overnight. Heat the oven to 350. Brush beaten egg on each cookie and sprinkle coarse sugar.

Step 7

Place in oven and bake 15-20 minutes until lightly golden brown. Cool fully on a wire rack or serve warm with powdered sugar.
