A quick meal without meat that is full of fresh flavours.

– 3/4 lb pasta* – coarse salt and fresh cracked black pepper – olive oil – 2 Tbsp pine nut – 30 small round cherry tomatoe – 1/2 cup homemade pesto, or more to taste., homemade recipe here – Parmesan, shaved, for garnish



The packet says to cook pasta till al dente in salted water. Toast the pine nuts in a teaspoon of olive oil over medium heat until gently brown.

Stir frequently since this happens fast. Remove and reserve pine nuts. Heat 2 tablespoons olive oil in the same pan on medium-high until hot.

Sauté cherry tomatoes, shaking the pan to redistribute. Keep the pan moving until the tomatoes blister and black dots appear. 

Step 4

Some tomatoes may rupture. Get off the heat. Drain pasta, then add pesto. Add blistered tomatoes, pine nuts, Parm, and black pepper. Serve now.
