– 1 large English cucumber – 1/4 red onion DRESSING – 1/3 cup sour cream – 2 Tbsp snipped dill – 1 Tbsp lemon juice – 1 tsp sugar – 1 tsp coarse salt – fresh cracked black pepper to taste

Thinly slice your cucumber. Use a sharp knife or 1/8-inch mandoline slicer. Safety gloves are recommended when mandolining cucumbers.

Cut your red onion the same way you did the other onion. Place both in a serving bowl and use your fingers to separate the onion pieces.

Put the food in the fridge while you clean up and make the dressing.

Step 4

Put the dressing ingredients in a bowl and mix them together. Taste it to see if you need to make any changes.

Step 5

Mix the salad with the sauce slowly, making sure that all the cucumber slices are covered. 

Step 6

If the slices stick, separate them with your fingertips. Wait to serve until chilled. Salad lasts 2 days refrigerated.
