Mini Eggs Chocolate Cupcakes Recipe

These homemade Mini Eggs Chocolate Cupcakes are made from scratch. Rich, soft chocolate cupcake with chocolate buttercream frosting, mini eggs and chocolate bar shavings.   

– Chocolate Cupcake – 2 cups all-purpose flour – 1/2 cup unsweetened cocoa powder – 1 teaspoon baking powder – ½ teaspoon baking soda – ½ teaspoon salt – 1/4 cup canola oil – 3/4 cup granulated sugar – 2 large egg – 2 teaspoons vanilla extract – 3/4 cup hot water – Chocolate Buttercream – 12 tablespoons salted butter softened – 1/2 cup unsweetened cocoa powder – ¼ teaspoon salt – 2-3 cups powdered sugar – Topping – Mini Cadbury Egg – Chocolate shavings and/or Easter sprinkle

Warm the oven up to 350℉. 18 cupcake liners should be used to line two 12-cup muffin pans.

Bake Chocolate Cupcakes Mix flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl. Set aside.

Put the oil and sugar in a different, bigger bowl. Then, use a whisk to mix the ingredients until they are fluffy.

Put the eggs and vanilla extract in the pan. Whisk the eggs in until they are fully mixed in.

Combine dry ingredients with wet ingredients in the larger bowl. Mix with a spatula or wooden spoon. It's okay if the batter is thick and dry.

Pour hot water into cupcake batter and mix well. Half-fill cupcake liners with batter. About 2 tablespoons per cupcake liner. Bake the cupcakes in two batches for 12-15 minutes or until a toothpick inserted into the centre comes out clean.

Step 6

Make Chocolate Buttercream Cream butter, cocoa powder, and salt in a bowl with an electric hand mixer until smooth.

Step 7

Add powdered sugar 1 cup at a time until buttercream is stiff and smooth. Put buttercream in a small star-tip piping bag.

Step 8

After the cupcakes cool, pipe a single circular layer of frosting on top. Add 3 mini eggs to the centre and top with chocolate shavings or pastel Easter sprinkles.
