Chocolate Almond Butter Cookies Recipe

Gluten-free, vegan, simple, and delicious Chocolate Almond Butter Cookies. Does it sound too wonderful to be true? Date-almond butter cookies. After baking, everyone enjoys these sweet, chewy almond butter cookies.  

– 1 cup creamy almond butter – 1 cup Medjool dates, pitted – 2 teaspoons vanilla extract – 1/2 teaspoon baking soda – 8 ounces melted dark chocolate – Flaky sea salt

Heat the oven to 350°F. Parchment a baking sheet.

Mix almond butter, dates, vanilla, and baking soda in a food processor. Pulse till blended and no significant dates remain.

Step 2

Use 2-3 teaspoons of water to moisten dry dough. Place 16-17 dough balls on the baking sheet and gently flatten with your hand.

Step 3

Crosshatch each dough ball with a fork. Bake 9-10 minutes. Remove cookies from oven and let cool. Freeze cookies for 10-15 minutes to ease dipping.

Step 4

Dip or drizzle cookies in chocolate and sea salt. Chocolate can be eaten or hardened. Keep cool or refrigerated.
