Cinnamon Swirl Banana Bread Recipe 

Thick Brush Stroke

In the middle of each slice of this cinnamon swirl banana bread is a thick ribbon of cinnamon sugar that goes all the way through the soft crumb. Add a simple vanilla icing on top of this quick bread to make it taste like a dessert.

Banana Bread – 2 cups (250g) all-purpose flour – 1 teaspoon baking soda – 1/2 teaspoon ground cinnamon – 1/4 teaspoon salt – 2/3 cup (135g) granulated sugar – 4 Tablespoons (56g) unsalted butter – 2 large eggs, at room temperature – 1 and 1/2 cups (345g) mashed banana – 1/3 cup (80g) plain Greek yogurt – 1 teaspoon pure vanilla extract Cinnamon Swirl – 1/4 cup (50g) granulated sugar – 1 and 1/2 teaspoons ground cinnamon

Set the oven rack to the lower third and preheat to 350°F (177°C). Lowering the oven rack prevents bread from overbrowning.

Grease a 9x5-inch metal loaf pan with nonstick spray. Set aside. Make banana bread batter: Mix flour, baking soda, cinnamon, and salt in a medium basin. Set aside.

For 2 minutes, beat the butter and sugar on high speed in a handheld or stand mixer with a paddle or whisk attachment until smooth and creamy.

Each egg should be added to the mixer at medium speed and beaten well. Add mashed bananas, yogurt, and vanilla extract and mix well.

With the mixer on low speed, steadily mix the dry and wet components until no flour pockets remain. Do not overmix. About 3 1/2 cups of batter.

Step 5

Cinnamon Sugar Swirl: Mix sugar and cinnamon. Spoon half the banana bread batter into the loaf pan. Spice up with cinnamon-sugar. Add remaining batter and spread.

Sticking the top layer of batter to the cinnamon-sugar filling makes spreading harder, but use a spoon to carefully distribute it. Swirl batter down loaf pan center with knife.

Don't over-swirl, which mixes layers. Bake the bread for 55–65 minutes, loosely covering it with aluminum foil halfway through to prevent browning.

The bread is done when a toothpick inserted in the center comes out clean with a few wet crumbs. Every oven is different, so start checking every 5 minutes at 55 minutes.

Remove bread from oven and let it cool in the pan on a wire rack for 1 hour. Allow bread to cool completely on the wire rack after removing it from the pan.

Step 10

Combined icing ingredients. I make rich icing with heavy cream. Spread on toast before slicing. Cover banana bread at room temperature for 2 days or refrigerate for 1 week. When frosting penetrates banana bread, the tops become wet.
