Carrot Cake Bars (Cream Cheese Frosting) Recipe

Homemade, soft-baked cream cheese-frosted Carrot Cake Bars with walnuts, fresh shredded carrots, and warm spices. Adding whipped cream cheese frosting and walnuts makes a delicious spring or Easter dessert.   

– Carrot Cake Bar – 2¼ cups all-purpose flour – 1 tablespoon ground cinnamon – 1 teaspoon baking soda – ½ teaspoon baking powder – ½ teaspoon ground ginger – ¼ teaspoon salt – 1 cup (2 sticks) salted butter softened – 1 cup granulated sugar – 1/2 cup packed light brown sugar – 2 large egg – 2 teaspoons vanilla extract – 2½ cups finely shredded carrot – 1/2 cup chopped walnut – Cream Cheese Frosting – 1 cup (2 sticks) butter softened – 4 ounces cream cheese softened – 1 pound powdered sugar – 2 teaspoons vanilla extract – 1/4 cup chopped walnut

Warm the oven up to 350℉. Spray cooking spray on a 9x13 baking pan and then put parchment paper inside it.

Carrot Cake Bars Mix the flour, baking soda, baking powder, ginger, and salt in a small bowl with a whisk. Put away.

With an electric hand mixer, cream the butter, granulated sugar, and light brown sugar in a large bowl until the mixture is smooth, light, and fluffy. One to two minutes.

Step 3

Mix the eggs in one at a time as you beat them in. Mix in the vanilla extract by beating the mixture well.

Step 4

Add the flour mixture to the egg mixture that is still wet. Beat on low speed until the flour is fully mixed in. Add the chopped walnuts and shredded carrots and mix well.

Level out the batter in the pan that has been prepared. 23 to 26 minutes in the oven. Before frosting the cake, let it cool all the way in the pan.

Frosting: cream cheese Beat butter and cream cheese in a bowl with an electric hand mixer until light and fluffy. Mix in powdered sugar and vanilla.

Beat slowly, increasing speed as needed, until thick frosting forms. Sprinkle chopped walnuts on the cake after frosting it with cream cheese.
