Yeast-Free Greek Yogurt Cinnamon Rolls Recipe

A simple Greek yogurt-based yeast-free cinnamon roll recipe! These tasty cinnamon rolls are easier to make and take less time. 

Cinnamon Roll Dough: – 2 cups gluten-free all-purpose flour – 2 tsp baking powder – ¼ tsp baking soda – ½ tsp sea salt – ¼ cup coconut sugar* – ½ cup unsalted butter melted and cooled – ⅔ cup whole milk Greek yogurt** – 1 large egg well beaten For the Cinnamon Sugar Filling: – 3 Tbsp unsalted butter softened – ⅓ cup coconut sugar* – 1 Tbsp ground cinnamon – Pinch sea salt Powdered Sugar Glaze: – 1 cup powdered sugar – 2 Tbsp water – ¼ tsp pure vanilla extract

Heat the oven to 375 degrees Fahrenheit and gently oil or butter an 8-inch square baking pan, cake pan, or pie pan.

Mix gluten-free flour, baking powder, baking soda, sea salt, and coconut sugar in a large bowl. This recipe works in a stand mixer with a paddle.

With a wooden spoon or rubber spatula, combine the melted butter, beaten egg, and whole milk Greek yoghurt (wet ingredients) into a thick, sticky dough.

I press the dough into a broad rectangle with my hands rather than a rolling pin on a floured parchment paper.

To prepare the filling, combine the cinnamon, sugar, and salt from the sea in a small bowl and whisk to combine.

Evenly distribute softened butter on dough. Room-temperature butter is soft and spreadable.Cover the dough with cinnamon-sugar.

Help roll the dough into a log with parchment paper. The dough may adhere to the parchment paper, but it should roll easily. Press the dough back together if it breaks apart.

Cut the log into 1-inch rolls using a sharp knife. Place raw rolls in pan.For 20–25 minutes, bake cinnamon rolls on the centre rack of the preheated oven until slightly golden brown.

Check cinnamon roll doneness with an instant-read thermometer in the centre. Full cook is 190–200°F.Select cinnamon bun frosting.

One cup powdered sugar and two teaspoons water in a small basin make a basic glaze. Make cream cheese or buttercream icing.
