Yaki Udon Noodles Stir Fry 

This recipe for vegetarian yaki udon noodles stir fry is a slight variation of a traditional Japanese stir-fry dish.  

– 2 packets udon noodles  – 3-4 small bok choy  – 10 oz shiitake mushroom – ¾ cup brown onion – 1 ½ teaspoon garlic  – 2 tablespoon soy sauce – 4 tablespoon oyster sauce  – 1 tablespoon mirin – 2 teaspoon honey – Sriracha mayo for serving

The ingredients for the savoury sauce should be whisked together in a small bowl or mason jar.

To prepare the fresh udon noodles, follow the instructions on the package. To prevent the noodles from sticking together, separate them using chopsticks.

Prepare the Japanese noodles by rinsing them under cold water and then draining them.

Regarding the sauce. You can make this dish vegan by omitting the sweetener or substituting it with another sweetener.

Continue to sauté the onion and mushrooms in a large pan or wok over medium-high heat until they have become more tender.

After adding the garlic and bok choy, continue to sauté for another thirty seconds.

After removing the noodles from the heat, stir in the sauce and toss them until they are completely submerged in the sauce.

To adjust the seasoning, taste the dish, and then serve it with a drizzle of sriracha mayonnaise and sesame seeds.
