Vegan Oatmeal Banana Bread Recipe

Vegan Oatmeal Banana Bread is gluten-free, dairy-free, refined sugar-free and moist and sweet! Make it a nutritious snack or ideal breakfast. 

– 2 cups rolled oats – 3 medium-sized ripe banana – 1/3 cup non-dairy milk of choice – I use full-fat canned coconut milk – 3 Tbsp avocado oil – 3 Tbsp pure maple syrup – 1 ½ tsp pure vanilla extract – 1 tsp apple cider vinegar – 2 tsp baking powder – ½ tsp baking soda – 2 tsp ground cinnamon – 1 tsp sea salt – ⅔ cup chocolate chip

Preheat oven to 350°F and line a 9" x 5" loaf pan with paper. In a high-powered blender or food processor, grind rolled oats into flour. A coarse flour is fine.

Mix all wet and dry components except chocolate chips. Combine till thick and smooth. Stop the blender and scrape the sides with a rubber spatula.

Mix chocolate chips into batter evenly.In the loaf pan, distribute banana bread batter evenly. If desired, add chocolate chips to bread.

The bread should rise and be golden brown after 40–45 minutes on the centre rack of the preheated oven.

Complete 40 minutes as scheduled.Let the bread cool to room temperature before slicing and serving to keep slices together.
