Vanilla Brown Sugar Eggnog Cookies Recipe

Plain vanilla-brown sugar eggnog cookies. Brown sugar, double vanilla, spiced rum or bourbon, cinnamon, and nutmeg. These sugary, buttery biscuits have the greatest spiced-vanilla flavour. Rich, sweet, creamy vanilla bean glaze. Decorated as desired. Brown sugar, real vanilla, and warming spices make these delights wonderful. 

Ingredient

– 1 1/2 sticks (3/4 cup) salted butter, at room temperature – 3/4 cup packed brown sugar – 1 egg, at room temperature – 2 tablespoons bourbon (optional) – 2 teaspoons vanilla extract – 2 cups, plus an additional 2-4 tablespoons, if needed all-purpose flour – 1/2 teaspoon cinnamon – 1/4 teaspoon grated nutmeg – 1/2 teaspoon baking soda – 1/2 teaspoon kosher salt SPICED VANILLA ICING – 2 cups powdered sugar – 1 tablespoon vanilla extract – 1/4 teaspoon grated nutmeg or cinnamon – 1/2 cup eggnog (or use milk/water) – Edible gold dust, vanilla sugar, and or sprinkles for decorating

Butter and brown sugar should be mixed in a big bowl. Mix in the egg. Beat in vanilla and bourbon. Beat in the flour, cinnamon, nutmeg, baking soda, and salt until the mixture forms a ball.

If the dough is too wet to roll, add 2-4 tablespoons flour. Heat the oven to 350°F. Parchment a baking sheet. Cut dough in half.

On floured parchment paper, roll the dough to 1/4 inch thickness. If you don't use enough flour, your dough will stick. Cut forms with Christmas tree, snowflake, and Grinch cookie cutters.

Place the cookies on a parchment-lined baking sheet. I recommend lifting cookies with a floured spatula. Cover the baking sheet and freeze for 15 minutes until solid.

Roll out leftover scraps and continue with remaining dough. Bake the cookies on the middle rack for 8–10 minutes until gently brown. Let chill.

Meanwhile, create frosting. Mix powdered sugar, vanilla, and nutmeg in a medium basin. Stir in 1 tablespoon eggnog or water/milk until smooth and drizzling.

To thin the glaze, add 1 tablespoon of water at a time until drizzling.  Use vanilla frosting, sprinkles or sugar to decorate each cookie.

To Make Snowflakes: Pipe lines and dots of frosting on each cookie to make a snowflake (see photographs). Add vanilla sugar if desired. Serve after an hour of frosting setting.

To Make Christmas Trees Sprinkle vanilla sugar on each tree after icing. For the Grinch, I used edible gold dust for his eyes and black tinted icing for his eyebrows and mouth. I iced his face green.
