Vanilla Bean Sugar Cookies: Slice and Bake Recipe 

Start holiday baking with my Easy Slice ‘n’ Bake Vanilla Bean Sugar Cookies. Adding brown sugar, real vanilla, and my secret ingredients—hazelnut liquor and almond extract—to boost vanilla flavour. These cookies are soft, buttery, and sweet with the best vanilla and brown sugar flavour. The frosting is luscious whipped caramel buttercream. Added holiday sprinkles. Real vanilla, brown sugar, and almond extract make these cookies delectable. Great icing too. 

Ingredient

VANILLA ALMOND COOKIES – 3 sticks (1 1/2 cups) salted butter, at room temperature – 1 cup light or dark brown sugar – 1 teaspoon vanilla bean powder or 1 tablespoon vanilla extract – 1 tablespoon hazelnut liquor  – 1 teaspoon almond extract – 2 large eggs – 4 1/2 cups all purpose flour – 1 teaspoon baking soda – 1/2 teaspoon kosher salt WHIPPED CARAMEL FROSTING – 2 sticks (1 cup) salted butter, at room temperature – 1 tablespoon vanilla extract – 2 1/2 cups powdered sugar – 1/4 cup caramel sauce or maple syrup – Assorted holiday sprinkles, for decorating

Mix butter, sugar, and vanilla in a large bowl. Mix in hazelnut liquor (if using), almond essence and eggs one at a time. Beat in the flour, baking soda, and salt until the mixture forms a ball.

Cut dough in half. Place each dough ball on a big wax or parchment paper. Form a 10-inch log. Refrigerate the dough for 3–4 hours or up to 5 days wrapped in paper.

Heat the oven to 350°F. Parchment a baking sheet. Remove the dough wrapper and slice the log 1/4-inch. On the prepared baking sheet, place slices 2 inches apart.

Soft cookies need 8-10 minutes to bake. Let chill. Make frosting. Beat butter and vanilla in a large bowl for 3–4 minutes until frothy.

Add powdered sugar and maple or caramel. Beat for 2 more minutes to whip. After cooling, frost and decorate cookies.

Gently lay a few small Christmas cookie cutters in the centre of the frosted biscuit to form your favourite Christmas cutouts. Sanding sugar the cookie cutter inside.

After shaking the cookie to disperse the sanding sugar, remove the cutter and decorate. Please refer to images. Cookies can be kept covered at room temperature for 4 days.
