Delicious Broccoli Cheese Casserole Recipe
Twice-baked sweet potatoes with tiny marshmallows make a luscious fall and holiday side. This recipe makes everyone kid again!
– 2 good sized sweet potatoe – 2 Tbsp unsalted butter – 1/4 cup buttermilk, possibly more – salt and fresh cracked black pepper – mini marshmallow
Set oven to 400F Cover a baking sheet with silicone or foil. Wash and pierce potatoes. Bake until barely soft when pricked with a tiny knife, 40–50 minutes.
Let cool for a few minutes; cut potatoes in half lengthwise. To strengthen the potatoes, carefully scoop away most of the meat, leaving some around the edges.
Mix the meat with butter and buttermilk in a food processor. Mix until smooth, then season with salt and pepper. Too thick? Add buttermilk.
To make sure the puree is hot, I microwave it briefly. Spoon purée into each potato half to the top, not mounding.
Place small marshmallows on top. Put back in oven until marshmallows are lightly browned. The process is quick, so don't leave. Serve now.
