Toffee Cookies Recipe

These toffee cookies are made with brown butter and don't need to be chilled or mixed. They are chocolate chip cookies that are chewy and have toffee bits in them. 

Ingredient

– 2 ½ cup All-purpose flour – ½ teaspoon Baking soda – ½ teaspoon Baking powder – 1 teaspoon Salt – 1 cup Plus 2 Tablespoons Unsalted butter for browning. For non brown butter see notes. – 1 ¼ cups Brown sugar packed light or dark. – ¼ cup White granulated sugar – 2 Large eggs room temperature – 1 teaspoon Pure vanilla extract – 1 cup Semi-sweet chocolate chip – 1 cup Toffee bit

Direction

Melt butter in a medium pan over medium heat. Heat butter until milk deposits separate and become amber. Stop cooking and cool.

Mix flour, baking powder, soda, and salt in a medium basin. Set aside.Mix brown butter, brown sugar, sugar, vanilla extract, and eggs in a large bowl. Whisk until smooth.

Mix the dry ingredients with a rubber spatula until they are almost completely incorporated into the liquid. The chocolate chips and chunks of toffee should be added.

Preheat oven to 350F. Parchment two cookie sheets. Rest the dough for 10 minutes while the oven heats.Use a big cookie scoop to scoop dough.

Per cookie sheet, place 6 dough balls.Bake 13-15 minutes. Cookies are done when golden brown. After 4 minutes on cookie sheet, move to cooling rack.
