Toasted S’mores Ice Cream Sandwiches Recipe

Chill, sweet Baked S'mores Ice Cream Sandwiches. On cinnamon graham crackers, vanilla ice cream, chocolate fudge sauce, and toasted marshmallows. Delicious s'more ice cream sandwiches swirl. Each bite has toasted marshmallows, fudge sauce, and vanilla ice cream. Best chocolatey-sweet summer ice cream.

Ingredient 

– 2-3 cups marshmallows – 1 1/2 quarts vanilla ice cream – 1/2 cup chocolate fudge sauce – 24 squares graham crackers

Prepare a 9x13 in. pan with parchment paper. Heat the grill. Place marshmallows on a baking pan. Toast 1-2 minutes in grill.

Watch out—marshmallows toast quickly. Stop leaving. Remove the grill pan. Let chill.

Spread 3/4 of the ice cream evenly in the pan bottom, then drizzle with fudge sauce. Top with toasted marshmallows and remaining ice cream.

Cover and freeze for 4 hours until hard. Unfreeze the ice cream slab and cut into 12 squares. Sandwich ice cream between cookies. Freeze. Enjoy!

Optional homemade Graham Crackers Preheat oven to 350°F.  Mix 1 1/2 sticks (12 tablespoons) melted salted butter, 1/4 cup molasses, 1/4 cup honey, and 1 teaspoon vanilla in a dish for 3-5 minutes.

Mix 2 1/4 cups flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1 teaspoon ginger, and 1/2 teaspoon kosher salt. Combine by beating. Add 1 tablespoon of water at a time until dough forms a ball.

Half the dough. Roll one disc of dough to 1/4 inch thickness between two dusted wax papers. Cut 24 2x2 inch squares. Place the cookies on a parchment-lined baking sheet. Repeat with remaining dough disc.

Sprinkle 1-2 tablespoons cinnamon sugar on cookies. Bake 10-12 minutes. Let chill.
