An old recipe for pickled apples called "Old Fashioned Spiced Crab Apples" goes well with any fall meal and is a must-have at Thanksgiving.

– 1 qt crab apple – 1 3/4 cups cider vinegar – 1 1/2 cups water – 3 cups sugar – 1 Tbsp cardamom pod – 1 tsp whole clove

Leave the stems on the apples and wash gently. Prick the apples all over with a fork or tiny sharp knife. This prevents bursts when cooking.

Mix vinegar, water, and sugar in a pot. Use a rolling pin or wine bottle to carefully crack cardamom pods. 

Step 3

Keep all black seeds. Add cardamom (seeds and pods) and cloves to the pan and boil. Add apples to the pot and lower the heat. 

Step 4

Simmer for 5–10 minutes, depending on apple size. Avoid mushy apples by using your judgment.

Step 5

Carefully take the apples from the heated liquid and pack them into jars. Strain the pickling liquid and pour it into the jars, submerging the fruit. 

Step 6

Allow to cool, then cover and put in the fridge. You can also put the apples in a can to keep them for longer. It makes a quart.
