Sweet Potato and Black Bean Vegetarian Tacos Recipe

Vegetarian Sweet Potato and Black Bean Tacos are delicious and healthy! If serving more than two, double the recipe—you'll want seconds! Add your favourite toppings to spice up these healthy tacos. 

INGREDIENT

– 2 medium-sized sweet potatoe – 3 Tbsp avocado oil – 1 Tbsp chili powder – 1 tsp sea salt – 1 15-oz can black beans, heated on the stove top – 2 large ripe avocado – ½ cup feta cheese or cotija cheese crumble – Fresh cilantro optional – 8 corn tortillas* – Enchilada sauce or salsa for dipping or drizzling

Heat the oven to 375°F. Peel and chop the sweet potatoes and add them to a large baking sheet with avocado oil, chilli powder, and sea salt.

Toss the sweet potatoes with your hands to coat them in oil and seasonings. To bake evenly, place sweet potatoes in a single layer on the sheet pan. 

Step 2

Sweet potatoes should be golden-brown and soft inside after 20–25 minutes at 375. 

Step 3

The sweet potato chunks' size determines the roasting time, so start watching them around 18 minutes to ensure they're crispy but not overcooked. 

Step 4

While the sweet potatoes roast, heat the black beans in a small saucepan on the stove. Also chop or prepare additional taco toppings. 

Step 5

Use your preferred method to heat tortillas. Stovetop heating works well too, but I microwave mine. 

Step 6

Fill tortillas with roasted sweet potatoes, black beans, avocado, cilantro, and cheese. Glaze tacos with enchilada sauce or dip them in a bowl.

Step 7

Instead, use your favourite salsa or hot sauce. Love these healthy vegetarian tacos!
