This Pizza Supreme Chicken is a delicious skillet dish with all your favorite pizza toppings. Comforting one-pot supper ready in 30 minutes.
– 6 chicken breasts, I used boneless skinless about 1 1/2 to 2 pound – salt and pepper – 1 Tbsp butter – 1 Tbsp olive oil – about 12 ounces, give or take, of your favorite jarred pasta or pizza sauce – 2 cups shredded mozzarella cheese, you can use other types as well – 1/3 cup sliced olive – 1/3 cup marinated red pepper strip – 1/4 cup banana pepper ring – 1/4 cup pepperoni or other small salami type slice – 1/2 green bell pepper, cut in thin ring – a handful of small button mushrooms, sliced – 1/4 small red onion, thinly sliced – about 1/4 cup grated Parmesan cheese
Place thick or uneven chicken breasts between waxed paper and pound them down to a uniform thickness to cook evenly.
Instead of a meat pounder, use a rolling pin or cast iron skillet. Sprinkle salt and pepper on both sides of the chicken.
After heating the butter and oil in a big skillet, brown the chicken for a few minutes on each side. Do this in batches to avoid overcrowding the pan.
Keep the heat hot enough to color the chicken without burning it. Set aside. Simmer the sauce in the pan.
Return the chicken breasts to the pan, cover (or foil), and boil gently for 10 minutes until cooked through. Chicken doesn't take much cooking time.
Remove pan from heat and sprinkle with a cup of mozzarella. Place the remaining toppings on top. Add mozzarella last.
Place under the boiler on the second shelf down from the flame and broil until cheese melts and everything bubbles.
If your cheese isn't bubbling and browning, move the skillet closer to the flame. I want it burnt. Sprinkle Parmesan cheese and serve immediately.
