– 3 cups All-purpose flour – ½ teaspoon Salt – 1 tablespoon Baking powder – 2 ½ teaspoon Ground cinnamon – 2 teaspoon Pumpkin pie spice – ½ cup Brown sugar packed light or dark – ½ cup Unsalted butter cubed and cold – 1 Large egg room temperature and slightly beaten – 1 teaspoon Pure vanilla extract – 1 cup Pumpkin puree blotted – 1 cup Heavy cream room temperature – 2 tablespoon Heavy cream for brushing on top of scone – Sprinkle of white granulated sugar for topping – 2 oz Cream cheese room temperature – 2 tablespoon Unsalted butter room temperature – 1 cup Powdered sugar sifted – 1 teaspoon Pure vanilla extract – 2 tablespoon Milk
Mix flour, salt, baking powder, cinnamon, pumpkin pie spice, and brown sugar in a large basin. Add cold cubed butter. Cut butter into dry ingredients using a pastry cutter or fingertips. The butter should be pea-sized.
1
Make a hole in the dry ingredients. Combine the softly beaten egg, vanilla, blotted pumpkin puree, and heavy cream. Mix with a rubber spatula until dough forms. Then, mix the dough by hand until the dry ingredients are barely mixed.
2
Be careful not to overmix the dough!Parchment a baking sheet. Place dough on cookie sheet center. Flatten the dough into an 8-inch round using your hands.
3
Freeze for 15 minutes. Heat the oven to 400°F. Use a sharp knife to cut scones into 8 triangles. Pull them apart to provide a tiny space between scones. They should remain round. See my blog post photo.
4
The scones should be brushed with heavy cream and then sprinkled with sugar before being served. Keep the freezer at a temperature of ten.
5
Bake till top is softly golden brown, 18-22 minutes. To avoid overbrowning the scones, use another baking sheet on the bottom pan.
6
Ten minutes should pass with the hot scones on the hot tray. Then, use a knife to separate the scones and set them on a rack to cool.
7
Beat butter and cream cheese in a small bowl with a hand mixer until creamy. Mix in powdered sugar until smooth. Mix in vanilla and milk until desired consistency.Pour glaze over scones using a spoon.
