Spicy Peanut Noodle

You really can't go wrong with these spicy peanut noodles! An explosion of flavours in a meal that takes less than 20 minutes to prepare.  

– 2 ounce asian noodles  – 2 tablespoons toasted sesame oil – ¾ pound chicken breast – 5 cloves garlic  – 1 tablespoon fresh ginger – 1 medium red bell pepper – ½ cup soy sauce  – 1 tablespoon honey – 2 tablespoons rice vinegar – 2 tablespoons Gochujang – ½ cup peanut butter – ¼-½ cup water

Follow package instructions to cook noodles. Whisk peanut butter, gochujang, rice vinegar, honey, soy sauce, and water in a small bowl; set aside.

In a big skillet or wok, heat the sesame oil. Add the chicken and cook it until it turns no longer pink.

After that, add the ginger and garlic and sauté them for 30 seconds with the chicken, until fragrant.

Add red pepper and sauté another minute. Add noodles and peanut sauce to the wok, remove from heat, and toss to coat.

Use basil as a garnish, and if you so desire, serve with lime wedges and peanuts that have been crushed.
