– 1 pound salmon – 1 cup breadcrumb– 1 medium brown onion– ⅓ cup oil– 2 tablespoon mayonnaise– 2 teaspoon fresh lemon juice– 1 teaspoon dijon mustard– 1 pinch cayenne– 2 teaspoon chopped parsley – Salt and pepper to taste

Salmon should be cut into smaller pieces and placed in a food processor container.

After turning it on, let it run until the mixture gets pasty, pausing if necessary to scrape down the sides.

Put mayonnaise, 4 tablespoons breadcrumbs, salt, pepper, lemon juice, mustard, cayenne, and onion in the food processor. Pulse several times to mix all ingredients.

Put the remaining breadcrumbs on a medium plate. Gently form 6 equal or 4 large balls from ground salmon mixture.

To simplify, keep a small bowl of warm water nearby to dip your fingers in. Dip and flatten each patty in breadcrumbs after making balls.

Heat ⅓ cup oil in a large skillet on medium-high heat and fry patties until crisp and golden brown on both sides. Maybe do it in batches.

Drain oil from patties on a paper towel-lined plate. Freshly squeeze lemon juice on each patty before serving.
