Ricotta Chocolate Chip Cookies

Soft and creamy ricotta cookies are made with butter and baking powder in this easy Italian recipe. Cookies with chocolate chips and granulated sugar can be topped with icing, jam, glaze, or frosting.  

– 1 cup Ricotta cheese  – ½ cup white granulated sugar + ⅓ cup for dipping – 1 large egg  – 4 tablespoons unsalted butter  – 1 ½ cups all-purpose flour – 1 teaspoon vanilla extract – ½ cup semi-sweet chocolate chip – ½ teaspoon salt – 1 teaspoon baking powder



Add softened butter and sugar to an electric stand mixer bowl. Use an electric mixer and paddle attachment on low speed to mix and cream.

Blend flour, salt, and baking powder in another bowl. Mix the dry ingredients with the wet ones with a spatula in three batches.

Your hands can knead thick batter. Fold the chocolate chips. Knead again to form a large ball.

Unsticky cookie dough is best. A cookie scoop makes 15 cookie balls. Sprinkle granulated sugar on cookie balls.

Coat these well. Parchment a cookie sheet. Spread the cookies in a single layer on the sheet and bake for 17 minutes until golden brown.
