Raspberry Cheesecake Lush Recipe

Raspberry Cheesecake Lush is a layered dessert that tastes great and is light and creamy. There is a golden Oreo cookie crust, a no-bake cheesecake layer, a fresh raspberry jelly layer and whipped cream on top.  

– Cookie Crust – 27 whole Golden Oreo – 7 tablespoons salted butter melted – Cheesecake Layer – 8 ounces cream cheese softened – 1 cup powdered sugar – 1 tablespoon lemon zest – 1 tablespoon fresh lemon juice – 1 tub (8 oz) Cool Whip thawed – Raspberry Jello Layer – 1 box (3 oz) raspberry gelatin – 1 cup boiling water – 2 cups frozen raspberrie – 1 tub (8 oz) Cool Whip thawed

Get the crust ready. Turn on the food processor and add the Golden Oreos. Pulse the cookies very quickly until they are broken up into small pieces.

Put a lot of crumbs in a 9x13 baking pan and freeze them for 20 minutes.

Make The Cheesecake Layer Put the cream cheese, powdered sugar, lemon zest, and lemon juice in a large bowl.

Mix it all together with an electric hand mixer until the cream cheese is smooth and the batter has no more lumps.

Slowly add the Cool Whip and mix it in until it's well blended. Smooth out the cheesecake mix and put it on top of the crust. Spread it out all the way to the edges. The Jelly layer will stay put better this way.

Layer Raspberry Jelly Mix raspberry gelatin powder and boiling water in a bowl. Whisk gelatin until completely dissolved.

Step 6

Add frozen raspberries and stir until gelatin thickens. Pour this gently over the cheesecake and spread the raspberries accordingly.

Cover the raspberry layer with Cool Whip. Cover the dish with plastic wrap or a lid and refrigerate for 8 hours or overnight.

Step 8

Cut into slices and top with cookie crumbs or raspberries before serving. Refrigerate the dessert before serving.
