Peanut Butter Protein Chocolate Chip Cookies Recipe

Peanut Butter Protein Chocolate Chip Cookies—healthier, easier, and delicious. These are top cookies. Super peanutty and chock full of chocolate bits, but without processed sugars or gluten. Every bite is chewy and crunchy with a chocolatey centre. These salty, sweet peanut butter cookies are delicious and irresistible. 

Ingredient

– 1 stick (1/2 cup) salted butter, at room temperature – 1/2 cup maple syrup – 1/2 cup peanut butter – 1 large egg – 2 teaspoons vanilla extract – 1 2/3 cups almond flour – 1/4 cup unflavored protein powder (I use Vital Proteins) – 1 teaspoon baking soda – 1/2 teaspoon kosher salt – 1 cup semi-sweet or dark chocolate chips or chunks – Flaky sea salt, for sprinkling

Heat the oven to 350°F. Parchment a baking sheet. Mix butter in a bowl. Beat in maple syrup slowly until whipped. Mix in peanut butter.

Mix in egg and vanilla. Mix in almond flour, protein powder, baking soda, and salt. Add chocolate chips/chunks.

Wet dough will be scooped into 1 tablespoon balls. On prepared baking sheet, space 2 inches apart.

Bake 7 minutes. Remove the pan from the oven and gently tap the baking sheet on the counter to deflate each cookie.

Return to oven and bake for 3–4 more minutes until cookies are brown but still doughy.

After baking, lightly tap the baking sheet on the counter 1-2 times. Leave cookies on baking sheet to cool.

Add flaky salt if desired. Serve warm or cool and keep in an airtight jar for 4 days.
