One Pot Chicken Florentine Gnocchi

Want a delicious, quick, and easy meal? In under 30 minutes, my One Pot Chicken Florentine Gnocchi combines tender chicken, soft gnocchi, and a creamy, cheesy sauce.  

– 2 tablespoons olive oil – 1 pound chicken breasts  – ½ teaspoon salt  – ½ teaspoon black pepper – ¼ cup shallots  – 2 cloves garlic  – ¼ cup sun dried tomatoes  – 1 cup half and half cream – 2 cups chicken broth  – 2 pounds gnocchi – 2 cups fresh spinach – 2 cups mozzarella cheese  – ½ cup parmesan cheese

In a large skillet, heat olive oil on medium-high. Season the chicken with salt and pepper and cook for 2–3 minutes until it browns.

Lettuce, garlic, and sun-dried tomatoes should be added to the pan. Cook for one to two minutes while stirring the mixture.

Stir in the half-and-half cream and chicken broth. After bringing to a simmer, add the raw gnocchi and stir.

Simmer for 4 to 5 minutes, or until the gnocchi are soft and the sauce has thickened. During this time, they should also absorb the sauce and make it thicker.

As the spinach wilts, add it and fold it into the mixture. If necessary, add more salt and pepper after tasting for seasoning.

If you stir in the cheeses, you should see that the cheese melts almost immediately.
