One Pot Beef Stroganoff

Imagine making a hearty, creamy, and delicious Beef Stroganoff in one pot. Soft beef and mushrooms in a rich sour cream sauce over egg noodles make this comfort food at its best. 

– 1 tablespoon olive oil – 8 ounce mushrooms  – 2 tablespoons butter  – 1 medium onion – 2 cloves garlic – 1 pound ground beef – 3 tablespoons all-purpose flour – 1 teaspoon paprika – ¼ cup white wine  – 4 cups beef broth – ¼ teaspoon salt  – ½ teaspoon pepper  – 8 ounce egg noodles  – ¾ cup sour cream – 1 tablespoon parsley

Over medium-high heat, heat olive oil in a large heavy-bottomed pot or Dutch oven. Simmer mushrooms with salt and pepper until browned, stirring occasionally.

Plate and set aside. Next, add butter and ground beef to the pan. Brown beef until no longer pink, 5–6 minutes.

Drain fat from regular ground beef. With salt and pepper, cook onions and garlic until soft.

To cook off the raw flavour of the flour, add it and paprika and cook for 1 minute.

Cook wine until almost evaporated, scraping up any browned bits on the pot bottom.

Mix in the broth. Start simmering on medium high heat. Stir noodles, mushrooms, and juices together.

Until the noodles reach the desired consistency, reduce the heat to medium low and simmer the mixture with the lid on.

Turn off the heat and add the sour cream while stirring it in. Decorate with chopped parsley, and serve!
