Mediterranean Sheet Pan Chicken Recipe

A tasty Mediterranean-inspired one-pan dinner recipe for any night of the week! This easy Mediterranean Sheet Pan Chicken recipe tastes so good you'd never believe it's so simple! 

INGREDIENT

Chicken Marinade: – 3.5 lbs bone-in skin on chicken thigh – 3 Tbsp avocado oil – 1/2 tsp paprika – 2 tsp lemon zest – 2 Tbsp lemon juice – 5 cloves garlic minced – 1 tsp sea salt Sheet Pan Meal: – 1 zucchini chopped – ½ red onion sliced – 10 ounces cherry tomatoe – 1 (8-oz) block feta cheese chopped into cube – 5 ounces pitted green olives ¾ cup* – 1 tsp dried parsley – 1 tsp dried oregano – Sea salt to taste – ¼ tsp black pepper – 3 Tbsp avocado oil

Mix chicken marinade ingredients in a small bowl or cup. Add marinade to raw chicken thighs in a large ziplock bag.  

Step 1

INSTRUCTIONS

Seal the bag and mix the chicken pieces with marinade. Leave to marinate for 15+ minutes. Bake at 425°F. 

Step 2

Cut zucchini, red onion and feta cheese and combine them in a large bowl with cherry tomatoes, olives, avocado oil, dried parsley, oregano salt and pepper. Mix to coat with oil and seasoning. 

Step 3

Place marinated chicken thighs on a large baking sheet without vegetables. After 15–18 minutes of baking chicken until golden brown and crispy, remove sheet pan from oven. 

Step 4

Spread the remaining ingredients—sliced onion, chopped zucchini, tomatoes, olives and feta cheese—in a single layer on the sheet pan. A little overlap is fine.  

Step 5

Keep baking for 10–15 minutes to cook chicken. A 165-degree chicken is done.  

Step 6

To check the temperature, insert a meat thermometer into the thickest part of the largest thigh and wait until the numbers stop moving. 

Step 7
