Mediterranean Orzo Salad

This simple, colourful Mediterranean Orzo Salad will transport you to the Mediterranean! It's easy to make and ready in 20 minutes, with fresh flavours that will make your taste buds dance! 

– ¼ cup lemon juice – ⅓ cup olive oil – 1 clove garlic  – ¼ teaspoon salt  – ⅛ teaspoon pepper – 1 cup orzo – 19 ounce chickpeas  – 2 cups cherry tomatoe – 1½ cups Kalamata olive – 1 cup feta cheese – ¼ cup fresh parsley – 1 medium red onion



Make sure to cook the orzo pasta in accordance with the directions on the package.

Combine all the dressing ingredients in a medium-sized jar, cover, and shake a few times to ensure thorough mixing.

Alternatively, you could combine all the dressing ingredients in a small bowl and whisk them together. Put aside.

Combine all the salad ingredients in a big bowl, drizzle with the dressing, and mix thoroughly.

I threw in feta cheese, cherry tomatoes, chickpeas, and my all-time favourite, Kalamata olives, along with a tonne of other healthy ingredients.

If desired, sprinkle more pepper, parsley, and feta cheese on top. Present chilled.
