Marinated Skirt Steak with Chimichurri Sauce Recipe

Great skirt steak marinade and chimichurri sauce recipe. Grill or pean-sear skirt steak for soft, delicious meat. 

– 1 ½ to 2 lbs skirt steak – 3 Tbsp avocado oil – ¼ cup liquid amino – 3 Tbsp rice vinegar – 2 Tbsp pure maple syrup – 2 tsp fish sauce or Worcestershire sauce – 2 tsp garlic powder – 2 tsp onion powder – 1 tsp dried oregano – Chimichurri Sauce

Whisk or blend all skirt steak marinade ingredients in a small bowl or blender until incorporated.

Put the marinade and uncooked skirt steak in a 1-gallon zip lock bag. Seal the bag and swish to coat the steak with marinade.

Keep chilled 8–48 hours. Though slow, it's worth it. Longer marinating tenderises and flavours beef.Drain the marinade before grilling skirt steak.

Heat your charcoal or gas grill to 400–500 degrees. Grill skirt steak over direct heat for 6 minutes per side for medium-rare or until done.

Use a 12-inch cast iron skillet to cook a 1.5- to 2-pound skirt steak over high heat and generously cover it with avocado or olive oil. Heat the skillet till sizzling.

Carefully place the steak on the hot skillet and sear for 6 minutes each side for medium-rare or 8 minutes for medium (or to your desired doneness).

Rest the cooked steak on a chopping board for 15 minutes before slicing. Slice meat against the grain using a sharp knife.
