Lemon Blueberry Bread With Lemon Glaze

Lemon flavour, juicy blueberries, and a tart lemon glaze make this lemon-blueberry bread a beautiful treat to serve to family and friends or take to a potluck! 

– ½ cup unsalted butter  – 1 cup white granulated sugar – 2 eggs  – 4 tablespoons milk – 1 teaspoon baking powder – ½ teaspoon baking soda – 1 ½ - 2 cups blueberries  – 2 tablespoon cornstarch – ½ teaspoon salt – 2 heaping tablespoons of lemon zest – 2 cups all purpose flour – 1 teaspoon vanilla extract

Heat the oven to 350 F. Mix eggs on low in a large bowl with an electric mixer. Mix sugar and butter until smooth. Mix in milk.

Stir cornflour into blueberries in a medium bowl. It should cover them well. Mix dry ingredients in a separate bowl and add to wet.

Mix everything on low until combined. Add lemon zest and blueberries. Put batter in a 9x5 loaf pan.

Bake for 1 hour and 15 minutes in the preheated oven until a toothpick inserted into the centre comes out clean or with breadcrumbs.

After 10 minutes in the tin, transfer the bread to a wire rack to finish cooling.

Mix all ingredients for the glaze. Pour over the cooled loaf with a spoon or fork and set. Slice 10-12 thick and enjoy.
