Leftover Ham and Cheese Penne

Leftover Ham and Cheese Penne is creamy and cheesy in 30 minutes! It's a delicious meal your whole family will love, made with perfectly cooked pasta, chunks of gammon and tender peas in a cheese sauce and topped with more parmesan cheese. 

– 1 pound penne  – 1 tablespoon butter – 1 tablespoon olive oil – 1 small onion  – 2 cups ham  – 1 cup chicken broth  – 1 cup heavy cream – ½ teaspoon salt – ¼ teaspoon pepper  – 1 cup Mozzarella cheese  – 1 cup cheddar cheese – ¾ cup frozen pea – 1 tablespoon fresh parsley – ½ cup Parmesan cheese

Melt butter and olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for 5 minutes to soften.

Add chicken broth and heavy cream, then salt and pepper. Stir in the cheeses for 3 minutes to melt.
