Hot Dog Relish Recipe

Make hot dog relish for a summer barbecue. This sweet and spicy corn relish goes well with hot dogs, burgers, salads, tacos, omelettes, pasta, potato salads and more. 

– ½ red bell pepper – ½ yellow bell pepper  – 4 corn on the cob  – 1 jalapeno pepper – Salt and pepper to taste – 1 cup apple cider vinegar – ½ teaspoon turmeric powder – 1 medium brown onion  – 2 garlic clove – 3 tablespoon tomato sauce – 1 teaspoon lime juice – 1 teaspoon grainy mustard – 1 handful fresh cilantro  – ½ cup white sugar

Corn. Grill, boil or bake corn. Cut the corn kernels off the cob and set aside after cooking and cooling.

Sauté bell peppers in vegetable oil in a large saucepot over medium heat. As they soften, add jalapeno, garlic, turmeric, salt, and pepper.

Stir just until combined, then add cooked corn, sugar and vinegar. Mix until sugar dissolves.

Remove from heat, squeeze lime juice, and cool. Cool and divide into glass jars/containers. Refrigerate for 6 hours or overnight.

Put together hot dogs. Top hot dogs and buns with shredded cheddar cheese.

Bake or grill them to melt the cheese and top with sweet and spicy corn relish.

Warm up and enjoy the hot dogs! Makes about 1 ½ to 2 cups of homemade corn relish with this recipe.
