Homemade Vegan Peanut Butter Twix Bars Recipe

DIY Vegan Peanut Butter Twix Bars. Dark chocolate, toasted almond “shortbread”, peanut butter “caramel”, more dark chocolate, and flaky sea salt. Every bite is sweet, nutty, chocolatey, and delicious. Gluten-free, easy-to-make Twix bars without processed sweeteners! 

Ingredient

– 1 cup almond flour – 1/3 cup coconut flour – 1/3 cup, plus 1/4 cup melted coconut oil – 2 tablespoons honey or maple syrup – 2 teaspoons vanilla extract – 1/2 teaspoon flaky sea salt – 3/4 cup creamy peanut butter (just peanuts and salt) – 2 tablespoons almond butter – 1/4 cup maple syrup – 12 ounces dark chocolate, chopped – 1 tablespoon coconut oil

Heat the oven to 350°F. Use parchment paper to line an 8x8 inch baking dish.

Mix almond flour, coconut flour, 1/3 cup coconut oil, 2 tablespoons honey, 1 teaspoon vanilla, and salt in a bowl.

Bake until lightly brown and toasted, 10-12 minutes. Mix peanut butter, almond butter, 1/4 cup maple syrup, 1/4 cup coconut oil, and 1 teaspoon vanilla in a small pot.

stir regularly while it gently boils over medium heat. After 2 minutes, remove from heat. Pour over crust. Let freeze 30 minutes until hard. Divide bars into 16.

Microwave the chocolate and 1 tablespoon coconut oil until melted. Cool 10 minutes.

Sprinkle salt on each chocolate-covered bar. Chocolate sets after 10 minutes in the freezer. Eat or refrigerate.
