Homemade Oatmeal Chocolate Chip Cookie Crisp Cereal Recipe

Better than bundled Recipe: Oatmeal Chocolate Chip Cookie Crisp. Make chocolate chip cookie cereal at home. It's easier than thought. Definitely better than packaged! Crunchy, sweet, and full of chocolate chips, this cereal tastes like a cookie. All tastes make you roll your eyes. This tastes finest all day.with milk, ice cream, or handfuls.

Ingredient

– 1 cup melted coconut oil – 1/4 cup granulated sugar – 1/2 cup light or dark brown sugar – 2 teaspoons vanilla extract – 2 large eggs – 1 1/4 cups whole wheat pastry flour – 1 cup all-purpose flour – 2 cups old fashioned oats – 1 teaspoon baking soda – 1/2 teaspoon kosher salt – 1 cup mini chocolate chips

Heat the oven to 350°F. Parchment a baking sheet. Mix coconut oil, sugar, brown sugar, vanilla, and eggs in a bowl.

Combine whole wheat flour, flour, oats, baking soda, and salt. Mix in chocolate chips.  Split the dough in four. Flatten each dough piece into a 1/2-inch rectangle on parchment paper

Cut the dough into 3/4-inch squares with a knife. These need not be accurate; may be smaller or larger. Photos above. Roll the squares into balls and place on the baking sheet.

For dry dough, lubricate your hands with coconut oil before rolling.

Bake 6–8 minutes. Cool fully, then store in an airtight jar for 1 week. Enjoy with milk, ice cream, or by the handful.
