Gluten-Free Dairy-Free Bread Pudding Recipe

Gluten-free, dairy-free bread pudding made easy and delicious. This decadent pastry makes a delicious breakfast or dessert! 

For the Bread Pudding: – 15 ounces gluten-free bread chopped into cubes* – 2 cups non-dairy milk of choice** – ½ cup full-fat canned coconut milk – ½ cup brown sugar*** – ½ tsp sea salt – 3 large egg – 1 Tbsp pure vanilla extract For the Sauce: – 1 cup full-fat canned coconut milk**** – 2 Tbsp gluten-free all-purpose flour – ¼ cup brandy optional – ⅓ cup brown sugar – 1 Tbsp pure vanilla extract – ½ tsp sea salt to taste

Spray an 8" x 8" square or 9" x 9" baking pan with cooking oil. You can alternatively grease it with butter or coconut oil.

Place the chopped bread on the baking pan and attempt to make it snugly nestled with few air gaps.

I bottom an 8-inch square cake pan with four slices of bread. I stuff bread bits between slices. On top are bread cubes from the rest of the loaf.

Whisk the oat milk, coconut milk, brown sugar, and sea salt in a small saucepan over medium-high heat until foamy and almost boiling.

Avoid boiling the mixture. Hot, frothy scalded milk. Few minutes to cool scalded milk. Add vanilla and whisk in the eggs one at a time until well mixed.

On toast, spread custard. Cover the floating bread with custard with a wooden spoon (not perfectly). Best results require 20–30 minutes or longer custard soaking of bread.

If feasible, chill overnight before baking. Bread and cake are messy and dense. Without it, bread crumbs feel different.Preheat oven to 350°F and foil casserole dish.

Middle rack, preheated oven, 40 minutes.Without foil, bake 5–10 minutes until lightly golden brown.

Dust bread pudding and sauce with powdered sugar.Serve cut warm bread pudding with sauce.

The bread pudding sauce components should boil in a small pot. Whisk often while cooking until sauce thickens, 3–4 minutes. Off the heat, serve the sauce with bread pudding.

If the sauce cools before use, heat it on the stove or in the microwave until hot. Sauce can be refrigerated for a week in an airtight container.
