EITHER use a wooden spoon or spatula to stir by hand, OR use a hand mixer and beat on LOW speed until everything is mixed. Getting faster as needed.

Step 2

It's going to take a while to mix everything together because it's thick.

Step 3

Make balls. To make energy balls that are all the same size, I use a small cookie scoop that holds about 1 tablespoon of dough.

Step 4

TIP: Put the dough for the energy balls in the fridge for about 20 minutes to see if that helps if it's too sticky. This is normal because honey is in it.

Step 5

They're good to eat right away, or you can put them in the fridge for a few hours to serve cold. Always make them ahead of time (like for after school)

Step 6

Let them chill for at least two to three hours. I think they taste best when they're cold. After-meal food that has a lid can be kept in the fridge for several days.
