Easy Strawberry Crumble Bars with Oats Recipe

When Spring's luscious strawberries hit the market, create these Easy Strawberry Crumble Bars with Oats. These oat-based crumbles are best cold. I promise they'll go before they're relaxed. 

Ingredient

FOR THE CRUST AND CRUMBLE: – 1 cup old-fashioned rolled oat – ¾ cup all-purpose flour – ½ cup brown sugar packed – ½ teaspoon sea salt – 8 Tablespoons unsalted butter melted (I used Earth Balance Vegan sticks) – ½ teaspoon vanilla extract FOR THE FILLING: – 2 cups finely chopped strawberrie – 2 tablespoons sugar – Zest of one lemon around 1 tablespoon, and juice will be for the glaze, I use organic lemon – 2 teaspoons cornstarch FOR THE GLAZE: – ½ cup powdered sugar – 1 tablespoon lemon juice from the lemon zested

Prepare the crust by preheating the oven to 375°F and lining an 8"x8" baking sheet with parchment paper. Mix oats, flour, brown sugar, and salt in a medium bowl. Stir with vanilla and melted butter (I used Earth Balance Vegan sticks).

Set aside 1/3 of the oat mixture for topping. Press the remaining 2/3 of crumble mix into your baking pan to form a crust. Bake for 10-13 minutes until crust edges are gently browned. Prepare filling while baking.

To make the filling, mix strawberries, sugar, lemon zest, and cornflour in a small basin. Spread strawberry filling evenly on the warm crust using a spatula.

To prepare the crumble, sprinkle the remaining mixture over the strawberry filling, covering as much as possible. Uncovered areas will remain.

Bake 30-35 minutes until crust and crumble are brown and strawberries bubble slightly (my was done at 32 minutes). All ovens are different).

Cool fully before removing from pan. Wait a few hours in the fridge before slicing, or do it straight away like we did. It will be difficult to slice and they will break if you don't wait.

To make the glaze, mix confectioner's sugar and lemon juice in a small bowl. It can be thickened by adding juice or confectioner's sugar. Customise your glazing. Slice and enjoy the cold bars with the glaze!
