Easy No-Bake Granola Bars Recipe

This granola bar recipe is simple and tasty! These gluten-free, naturally sweetened granola bars make a great snack. Recipe yields 16 bars.  

– 1 ¾ cups old-fashioned oats or quick-cooking oat – 1 teaspoon ground cinnamon – ½ teaspoon fine sea salt (if using regular table salt, scale back a bit) – 2 cups mix-ins* (nuts, seeds, chocolate, shredded coconut or dried fruit) – 1 cup creamy peanut butter or almond butter – ½ cup honey or maple syrup – 1 teaspoon vanilla extract

For a 9-inch square baker, cut two crisscrossed parchment strips to fit neatly against the base and sides. Use parchment paper to slice bars. Mix oats in a big bowl.

Mix in cinnamon and salt. Set aside. Pulse the mix-ins in a food processor or blender (or chop by hand). Blitz large nuts like almonds or pecans for a few seconds.

Run the machine for a few more seconds to break up the remaining ingredients into tiny pieces. Add to oats bowl. In a 2-cup liquid measuring cup, measure nut butter.

Mix vanilla extract and ½ cup honey. Mix well. Since chocolate melts, the liquid mixture must be close to room temperature before being added to the dry mixture.

Put wet ingredients in dry. Stir with a large spoon until dry oats are gone. It requires arm strength, but you can! If the mixture came together easily, add oats until you can't.

Place mixture in square baker. Put the mixture in the baker with your spoon, then use the bottom of a flat, round object (like a short, sturdy drinking glass) to pack it down.

Cover the baker and refrigerate for an hour or overnight. Grab the parchment paper on opposite corners to lift the bars out of the baker when ready to slice.

Slice the bars into 4 even columns and rows with a sharp knife. Wrap bars in plastic or parchment paper (they'll stick together if stored together).

Bars last several days at room temperature, two weeks in the fridge, or months in a freezer-safe bag for best flavour.
