Creamy Sun Dried Tomato Chicken Gnocchi

Creamy Sun Dried Tomato Chicken Gnocchi is yummy, simple, and comforting. In 20 minutes, you can serve these juicy chicken tenders with sun-dried tomato creamy sauce and gnocchi. 

– 1 pound gnocchi  – 1 tablespoon oil from sun dried tomatoe – 1 tablespoon butter  – 1 pound chicken tender – ¼ teaspoon salt  – ¼ teaspoon pepper – 3 cloves garlic – 7 ounce sun dried tomatoes  – 1½ cups milk – ½ cup half and half – ½ cup Parmesan cheese – 1 tablespoon cornstarch – 2 tablespoons milk – 1 tablespoon fresh parsley

Cook gnocchi per package instructions. Drain and set aside. Drain the sun-dried tomato oil into a small bowl. Save for the recipe.

In a large skillet, heat butter and sun-dried tomato oil on medium-high. Sprinkle salt and pepper on the chicken tenders in the skillet.

Cook both sides of the chicken until no longer pink and lightly golden brown. Set aside the chicken on a plate.

If your skillet needs more oil, add sun-dried tomato oil. Sauté garlic and sun-dried tomatoes in the skillet for 2–3 minutes until fragrant.

In a skillet, combine the half and half, the half and half, and the Parmesan cheese. Add the other half and half.

Combine the cornflour and the two tablespoons of milk in a small bowl and whisk them together. Add this mixture to the skillet as well.

In the process of bubbling from the cornflour, the sauce will start to become more thick. Cook for approximately one minute.

Return the chicken to the skillet after adding the gnocchi. Add some sauce to the chicken, garnish with parsley, and serve warm.
