Muesli, bananas and chocolate make excellent breakfast bars! When overripe bananas are around, make them!
– 3 large ripe bananas 1 ½ cups mashed– ½ cup creamy almond butter *– 1 1/2 cups quick oats– ⅓ cup cocoa powder– 1/2 cup to 1 cup chocolate chips optional**– ¼ tsp sea salt to tasteOptional Additions:– 2 Tbsp pure maple syrup– 1 tsp pure vanilla extract– 1 tsp ground cinnamon

Pre-heat the oven to 350°F and line an 8-inch square baking pan with parchment paper.

Mash ripe bananas in a large basin until creamy. Mix the wet ingredients with almond butter and pure maple syrup until completely blended.

In the mixing bowl, add quick oats, cocoa powder, sea salt, and cinnamon (if adding). Mix to a thick batter. Adding chocolate chips? Stir in.

Spread the chocolate banana oat mixture evenly in the baking dish. Sprinkle more chocolate chips if desired.

Place on the centre rack of the preheated oven for 12–16 minutes, or until the sides are firm (I bake mine for 15).
As soon as the chocolate muesli bars have reached room temperature, cut them into slices and serve them.
