Chicken Scampi Recipe 

Try this 20 Minute Chicken Scampi, with tender chicken in a garlicky butter sauce over your favourite pasta. It's simple but elegant, with flavours so delicious it'll make your kitchen the best Italian restaurant in town! 

– 1 pound linguini  – 1½ pounds chicken – 2 tablespoon cornstarch – 1 teaspoon Italian seasoning – salt and pepper to taste – ¼ cup olive oil – ¼ cup butter – 6 cloves garlic – ½ teaspoon red pepper flake – 1 cup dry white wine – 2 tablespoon lemon juice – ¼ cup fresh parsley – ¾ cup Parmesan cheese

Boil the pasta in a large pot of salted water, following the package's instructions.

Place the chicken pieces in a bowl after patting dry. Toss with cornflour, Italian seasoning, salt, and pepper.

Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat until the butter melts.

A single layer of chicken pieces should be seared in the skillet for 5 minutes to brown all over. Place chicken and remaining butter on a plate.

Cook the remaining butter and olive oil in the skillet until the butter has melted. Add the remaining butter to the skillet.

For thirty seconds to one minute, add the garlic and red pepper flakes, and continue to cook until the garlic has developed an aromatic quality.

Once the alcohol has cooked off and the wine has somewhat reduced, pour the wine into the garlic butter mixture and cook for two minutes.

After turning off the heat, whisk in the lemon juice. Put the chicken back in the skillet and thoroughly mix it with the sauce.

You should taste the seasoning and make any necessary adjustments with salt and pepper.

You can toss this with the pasta and parsley or serve it over the cooked pasta. Serve warm, garnished with Parmesan cheese.
