Chicken Francese Recipe

A popular Italian-American chicken meal, Chicken Francese, is easy to make. It will become a weeknight supper staple since it's so good! Gourmet chicken in 30 minutes on one pan at home!  

– ½ cup all-purpose flour – 1 teaspoon salt – ½ teaspoon pepper – 3 large egg – ¼ cup vegetable oil – 4 chicken breast – 1 large lemon – 1 cup chicken broth  – ½ cup white wine – 1 tablespoon lemon juice – 1 tablespoon all-purpose flour – 2 tablespoon butter – 2 tablespoon parsley

In a shallow dish, combine ½ cup flour, 1 tsp salt, and ½ tsp pepper. Combine with whisk. Whisk eggs in another shallow dish.

Split the chicken breasts in half lengthwise, set each half between two parchment papers, and lightly pound with a meat mallet until ¼-inch thick.

Proceed with remaining chicken. Completely coat both sides of the cutlets in the flour mixture and shake off excess. Coat them in egg mixture.

In a large 12-inch skillet, heat oil on medium-high until shimmering. Add 3–4 chicken chunks to the skillet.

Place chicken on paper towel-lined platter. Proceed with remaining chicken.

Remove excess oil from the skillet, then add the lemon slices and cook for 30 seconds per side until aromatic and slightly charred.

Melt butter in skillet. Whisk in flour and simmer for 30 seconds to eliminate flour taste.

Stir in the lemon juice, wine, broth, and the last ½ teaspoon of salt. Adjust with pepper.

Simmer for 2 minutes to reduce. Continue cooking the chicken for 3–4 minutes in the skillet. Before serving, garnish with parsley.
