– 8 ounces penne pasta OR rotini pasta– 2 boneless, skinless chicken breast– 1 teaspoon garlic powder– 1 teaspoon Italian seasoning– ½ teaspoon kosher salt– ¼ teaspoon black pepper– 2 tablespoons olive oil– 4 cups chopped romaine lettuce– 1/2 cup Caesar salad dressing– 1/4 cup grated parmesan cheese

Boil pasta in a big pot of salted water. Follow package instructions to cook pasta. Cook al dente or softer as desired. To end cooking, drain and rinse pasta under cold water. Set aside.

Cook Chicken: Combine garlic powder, Italian seasoning, kosher salt, and black pepper in a small bowl. Sprinkle the spice mix on both sides of the chicken breasts and press it in.

Heat olive oil in a skillet over medium-high heat. After heating, fry the chicken breasts for 6-8 minutes per side until golden brown and 165 degrees F.

Wait a few minutes after removing the chicken from the frying pan before slicing or chunking it.

Prepare pasta salad by mixing cooked spaghetti, chicken breast, and chopped romaine lettuce in a large bowl. Toss everything in Caesar dressing until coated. Increase dressing as needed. Add parmesan and blend again.
